Palm

Gracing the beaches, giving out the tropical warmth and welcome, it is the wonder tree of Sri Lanka .

  • There are three varieties of palm in Sri Lanka .
    • Cocus nucifera (Coconut)
    • Caryota urines (Fish-Tail Palm)
    • Borassus flabellifer (Palmyrah)

  • Though its uses are numerous, most interesting is the alcoholic brew, toddy, the sap of the young inflorescence taken before its opening. The toddy comes in two varieties - 'Mee Raa' of sweet toddy and 'Raa' or mature toddy.

  • The sap contains sugar (22% in Coconut sap) which produces alcohol when allowed to ferment by free floating micro-organisms (fungi and bacteria). This process of fermentation is stopped using a mixture of herbs and tree bark to obtain sweet toddy. Mature toddy contains 6.5 % of alcohol on average.

  • Sweet toddy is used to make treacle and jaggery by evaporating its water content by heating / boiling over a slow fire.

  • Mature toddy is used to extract vinegar, a slow process which takes 10 to 15 weeks. Free floating micro-organisms are used in fermenting the toddy, standing in large wooden vats.
The Coconut Tree and The King Coconut

The coconut tree reigns supreme as a source of food and drink to the islanders.

The king coconut is the "Thambili", the bright orange variety that gives you a cool, refreshing drink which is 100% natural and quenches your thirst instantly.

The clear sweet colorless liquid of the king coconut not only provides a delightful cool drink, it also contains basic nutrients as well, since it is also used for severely dehydrated patients in place of saline.

The naturally sweetened waters of the younger fruits  of the ordinary coconuts, ("Kurumba") can also be consumed as cool drinks, since they too are thirst-quenchers.

When the coconut is split the dazzlingly white kernel contributes to the typical favor of traditional Sri Lankan curries.

The succulent kernel of the king coconut and the young coconut is a sweet delicacy fit for kings.
